Teff is an ancestral gluten free cereal from Eritrea and Ethiopia. Despite its small size, its concentration of nutrients is very rich and diverse, and it is considered by many as a superfood. With a high and diverse concentration of nutrients, such as, calcium, iron, copper, aluminium, barium, phosphorus, thiamin and magnesium, which help in a fast recovery after physical exercise or a strong mental exhaustion.

It is also rich in slow digestive carbohydrates, helps controling blood sugar levels and it is indicated for weight control, since it contains a high satiating power. As it is a gluten free cereal, it is highly appreciated by celiacs and natural food enthusiasts.

We get Teff Flour from grinding the entire grains, that is, the seeds with the shells. This process, considering the colour of the grains, makes the flour to be white or brown.

Naturally gluten free, it can be consumed by people intolerant to gluten. Easy to digeste, contains a great quantity of proteins with a good balance of essential amino acids, in particular, lysine, important to calcium metabolism, carbohydrates of low gycemic index, good source of antioxidants, low in fat and whole wheat, so it has a high level of fibres, vitamins and minerals.

Traditionally, Teff Flour is used to make injera, the Ethiopian bread, very popular in African countries. This flour is a delicious, healthy and gluten free alternative to the traditional flours.
